Contact usThe CRYOLINE® RC rapid crust freezer is a specialized, indexing unit built for freezing the surface of larger pieces of food products prior to portioning using methods such as slicing or dicing. The patent-pending CRYOLINE RC technology uses high-velocity gas in an innovative gas flow path that promotes the formation of a uniform frozen crust across the surface. The CRYOLINE RC is best suited for crust freezing pre-cut deli meat such as ham, sausage, bacon and luncheon meat, or portioned whole cuts such as pre-cut steaks and alternative-meat protein products.
High-velocity nitrogen gas flow is parallel to the product’s transfer pathway and results in a high rate of heat transfer while providing uniform crust freezing across the surface of the products. This fast heat transfer produces a freezer with a small footprint, a short dwell time, and highly efficient frozen crust formation. Within the freezer, the gas flow is generated with a centrifugal fan and funneled through tight spaces between products. This funneling creates the high-velocity flow, which effectively takes heat away from food.
For optimum hygiene and sanitation, all internal components are made of stainless steel or polyethylene and designed with sloped surfaces, rounded corners, proper drainage, and polished welds. Additionally, the CRYOLINE RC freezer features an electrically driven top-lifting design which ensures full access and separation of the mechanical components for cleaning the internal surfaces.
