Nitrogen use in the craft brewery is increasing. Nitrogen addition to the product facilitates improved foam formation and desired mouthfeel of the brew. Many brewers do this by pre-filling the keg with "beer gas;" a mix of approximately 70% nitrogen and 30% carbon dioxide.
